BCC’s Farm To Table Experience:

This year, Chef Rich will be bringing in more of the freshest and best sourced foods to give you a true “Farm to Table” experience.

Our main vendors will include:

Fairway Packing (www.fairwaypacking.com) will supply our prime beef.  Chef Rich will then dry age steaks on Himalayan rock salt for 21 days.  Fairway sources the finest and most sustainable farm programs to raise their cattle to guarantee the finest and most consistent cuts of beef.

 

Motor City Seafood Company (www.motorcityseafood.com) is Southeastern Michigan’s premier fresh seafood wholesaler. Products are delivered straight into Detroit, providing some of the freshest fish and seafood that the area can experience.

 

Oakland Urban Growers (www.oaklandurbangrowers.com).  Oakland Urban Growers is quickly becoming Oakland County’s newest catering gem, providing Southeastern Michigan’s best restaurants and country clubs with fresh, organic microgreens, herbs and baby vegetables.

 

Eat Local Eat Natural (www.eatlocaleatnatural.com) will connect us with local farms that use sustainable natural practices to give us the freshest dairy, greens, meat and fish available.

We will continue to buy cleaning products, dry goods, and basic food service supplies from Sysco, but REST ASSURED, all of the main food items on your plate are from the amazing lineup of high quality vendors listed above.

 Club Happenings:

In addition to using only the best ingredients, Chef Rich and Robert are planning a number of enhancements to the dining program:

 

  • You will continue to have casual and classic dining options in the Maguire Bar, on the Patio and at the Dive Bar.

 

  • At the High Dive, we will be offering a special menu Friday through Sunday thanks to a new pizza oven and cook station that will allow food to be prepared right up on the High Dive deck.

 

  • With the addition of drapery, artwork, plants, screening and soft lighting, the Club Room will become our upscale steak house style venue where you can enjoy our finest dining, including dry aged steaks and fresh seafood.  The dining team started this concept at the end of last season with excellent results.

 

  • As the evenings get longer and warmer, we are bringing back “Jazz on the Patio” with “Hot Off the Grill” menu items so you can relax and enjoy great food, music and sunsets.

 

  • Throughout the Summer season and into the Fall, Chef Rich is looking forward to hosting several special tastings and theme dinners, some in the Clubhouse and some at the 7th Tee Pavilion.  Be on the lookout for “Chef’s Table” invitations and sign up fast!

For 2018, the Club is fortunate to be returning a full staff of seasoned culinary and service professionals.  With an experienced staff, “Farm to Table” vendors and a range of unique venues, we envision an elevated dining experience throughout the Club.
